Definition

Rejecting the null hypothesis does not mean proving the alternative hypothesis. Just as being not innocent does not mean being guilty of that specific crime.
It is a mechanism designed to avoid subjectivity, as it is much easier to prove something is not true than to prove it is true, using a hypothesis meant to be disproven that doesn't affect the paradigm. For example, when testing the difference between two sample means, we premise the assumption that the populations of the two sample groups are the same.
